Atlantic Coast Freezers provides both on-site and off-site core sampling and fat testing for meat products. We have a dedicated USDA approved room where we perform this service.
This service is done under MICA guidelines. Our part is to follow Section 4 (Method of Sampling) of the 2007 MICA fat testing guidelines.
Once the samples are taken and bagged, they are taken to an independent lab to find out either the fat content or the bacteria count, whichever the customers tells us to do. Fat Testings can take up to 3 days to receive results while bacteria testing can take up to a week.
